Instant pot and Instant Vortex Air fryer Diwali recipes that are easy, quick, bachelor friendly, even dorm folks can try and my experience using air fryer for first time.

What is Air Fryer?

Air fryer is the latest popular appliance used to make fried foods without deep frying or to do baking and many other uses.

How does air fryer work?

Air fryer have heating elements and fan circulates hot air around the food making it cook faster, crisp and light.

If you air fry instead of deep frying, these are claimed healthier as they are low in cholesterol and in calories.

Air fryer Vs Oven

I could not stop comparing air fryer and a oven. Air fryer are best option to sit on your kitchen countertop than a conventional oven.

An oven is bigger in capacity and have a comparatively smaller fan inside while air fryer have smaller compartment with bigger fan in proportion.

So the process is fast in the air fryer. Perfect for small amount of snacks, like french fries, mini pizza, bread pizza, roasted veggies, paneer tikka etc.

Why I love to use Instant pot and Instant vortex air fryer?

During festival times or Holidays, we tend to be busy always whipping up something for family and friends.

As much as I love cooking, I also want to spend time with them. So I always try to spend less time in kitchen as much as possible.

Or something that doesn’t needs babysitting. Apart from that, there are many reasons that I love to use these two trustworthy brand in my kitchen. Here are my genuine thoughts:

Instant pot:

  • Electric cooker plus pressure cooker in which itself you can do all the stir frying/ saute (Tr-ply bottom)! Though it is 7-in-1 function, I love these three functions as an Indian.
  • Inner pot is stainless steel (Dishwasher safe, yay! and have non-stick option as well). Stainless steel lid.
  • You can control the heat and pressure, with the settings.
  • No fire, you can do it even sitting in an Air conditioned room.
  • Less mess, comparatively and perfect for bulk cooking.
  • Burnt warning to avoid disasters.
  • Quick release (pressure) option.
  • Other features are – slow cooking, steam, warming, make yogurt. I use Yogurt option extensively.

Vortex Air fryer:

  • Firstly it is easy to clean because of the material used.
  • Removable tray and dishwasher safe (Yay again!)
  • Super fast cooking. This is the main advantage I love about it.
  • Compact to sit in your countertop.
  • Light weight, you can easily it move around.
  • Simple and easy to use, with touch panel.
  • You can adapt many recipes that are deep fried and convert to air fry to reduce oil consumption.
  • Temperature range can be used.

Instant pot Diwali recipes

I have already shared few recipes using Instant pot, including Gajar halwa, Corn flakes chivda and kheer. This time, I tried two more classic recipes using Instant pot (recipes below).

Both recipes turned out to be awesome and comparatively easier to the stove top method. No tension of burnt food, stuck to the pan, no splatter/ spills.

Instant vortex Air fryer

When I received Instant Vortex Air fryer last month from Instant pot Singapore, I was so excited! Right in the time of Diwali to try out some Diwali recipes with Air fryer.

Instead of deep frying, I switched to air frying method. Any recipe you think you can bake or deep fry, can be converted easily to an air fryer recipe.

I will share the recipes I tried for Diwali and already shared the videos in my social media.

But already I have started using it as replacement for my conventional oven as this is compact and perfect for my sort of baking/ usage/ air frying. So will come up with more recipes to use Air fryer.

So far, I love my Instant Vortex Air fryer, for the results, ease of cleaning, how it sits in my counter top and it’s lightweight to move around!

Let’s see the recipes one by one and my experiences making these in Instant Vortex Air fryer.

Air Fryer Diwali recipes

1. Air fryer Cashews

First one I tried with Instant vortex Air fryer was Spicy cashews.

Perfect for a Diwali party or as a snack! Crispy and addictive air fried golden cashews with spices to tingle your taste buds.

I was so happy with the results on my first dish in Instant Vortex air fryer 4–in-1. It was so easy to handle and simple to use!

It turned out perfect and super fast. Let’s see how to make it.

Servings 5-6

Ingredients

  • 1 & ½ cups Cashews
  • 1 teaspoon Ghee
  • ⅛ teaspoon Turmeric powder
  • ¼ teaspoon Black pepper powder
  • ½ teaspoon Red chilli powder
  • 1 teaspoon Chaat masala
  • ¼ teaspoon Salt or to taste

Instructions

  1. Take cashews in a mixing bowl.
  2. Add ghee to it and mix well to coat.
  3. In the display panel, press Air Fry.
  4. Press Temp. Using the dial, choose 171 C.
  5. Press Time. Using a dial, set to 6 minutes. (You will see On and Preheat in the display)
  6. Wait until the display indicates ADD FOOD.
  7. Pull out the air fry basket.
  8. Spread the coated cashews as a single layer in the cooking tray.
  9. Insert the air fry basket back.
  10. Cooking will proceed after 10 seconds. (Display changes from Add Food to indicate cook time and temperature along with Cook)
  11. Half way through, the smart programme by itself indicates to Turn Food on the display as it beeps.
  12. Now stir the cashews or gently shake the basket.
  13. Put back the air fry basket back to resume the cooking.
  14. Once the timer is up, pull out the basket. Golden fried crisp cashews are ready.
  15. Now transfer immediately to the mixing bowl.
  16. Add all the spices quickly and toss/ mix well to coat evenly.
  17. Spicy air fried cashews are ready!
  18. Once cooled, store in an airtight container.

2. Air fryer Namak Pare

The second dish I tried was namak pare. It is the best recipe to try in Air fryer for Diwali.

Namak pare is a savoury snack with an addictive taste and flavour that no one can stop eating just one! Let’s cut the deep-frying part using Instant pot Vortex air fryer 4–in-1, yet coming up with a crispy and light texture.

Yields 1 & ½ cups

Ingredients

  • 1 & ¼ cup All purpose flour
  • ¾ teaspoon Caraway seeds (Ajwain)
  • ⅛ teaspoon Baking powder
  • Salt & Pepper to taste
  • 3 tablespoon Oil

Instructions

  1. Take flour, caraway seeds, salt, pepper and baking powder in a mixing bowl. Give it a mix.
  2. Add oil and mix well. After that, add water (¼ cup plus 1 or 2 tablespoons as needed) and knead to a smooth dough.
  3. Rest for 10 minutes minimum.
  4. Knead again to smoothen it. Divide into two.
  5. Dust and spread into thick discs.
  6. Using a pastry cutter or knife, cut into thin strips.
  7. Then again cut diagonally to get diamond shapes.
  8. In the display panel, press AirFry.
  9. Press Temp. Using the dial, choose 149 C/ 300 F.
  10. Press Time. Using the dial, set to 12 minutes. (You will see On and Preheat in the display)
  11. Wait until the display indicates ADD FOOD.
  12. Pull out the air fry basket.
  13. Spread the namak pare as a single layer in the cooking tray.
  14. Insert the air fry basket back.
  15. Cooking will proceed after 10 seconds. (Display changes from Add Food to indicate cook time and temperature along with Cook)
  16. Half way through, the smart programme by itself indicates to Turn Food on the display as it beeps.
  17. Now gently shake the basket.
  18. Put back the air fry basket back to resume the cooking.
  19. Once the timer is up, pull out the basket and gently shake again.
  20. In the display panel, press AirFry again.
  21. Press Temp. Using the dial, choose 163 C/ 325 F.
  22. Press Time. Using the dial, set to 4-6 minutes. If you want a deep yellow hue air fry for 6 minutes, but 4 minutes is enough as well.
  23. Air fried Namak pare are ready!
  24. Once cooled, store in an airtight container.

My notes

  • Depending on the thickness, the timing may vary.
  • Do not spread too thick.
  • You can use wheat flour in place of All purpose flour and follow the same recipe.

3. Dahi Puri chaat

The last recipe I tried for Diwali with Instant pot Air fryer was Dahi Puri. I just used the Puri papad and air fried it instead of deep frying.

I have done this using a oven, but trust me, this was a breeze. Perfect size and it gets done in no time.

Always have a thought for some dishes I use oven and at times even avoid making the dish. Just because I have to preheat the large oven and wait for it to get ready.

But in Air fryer, it gets done so fast. Now let’s see how to make this.

Diwali party menu is not complete without a chaat item and this Dahi puri made using puri papad air fried in Instant pot Vortex air fryer is perfect treat to indulge. I have baked these earlier, but using an air fryer makes the process quick and hassle free!

Servings: 2 people

Ingredients

  • 12 Pani puri Papad
  • 1 Potato boiled & cubed
  • ½ cup Green gram, cooked
  • Green chutney as needed
  • Sweet chutney as needed
  • 1 cup Curd beat smoothly with 1 or 2 tablespoon of caster sugar/ powdered sugar
  • Chaat masala For sprinkling on top
  • Red chilli powder For sprinkling on top
  • Roasted cumin powder For sprinkling on top
  • Plain Sev for topping
  • Plain boondi for topping

Instructions

Air frying Pan puri Papad

  1. In the display panel, press AirFry.
  2. Press Temp. Using the dial, choose 191 C/ 375 F.
  3. Press Time. Using dial, set to 2 minutes. (You will see On and Preheat in the display)
  4. No need to wait until the display indicates ADD FOOD. (No preheat needed)
  5. Pull out the air fry basket.
  6. Spread the pan puri as a single layer in the cooking tray.
  7. Insert the air fry basket back.
  8. Half way through, after a minute is over, you can give it a shake. I did not do this, yet it was fine.
  9. Once the timer is up, pull out the basket. Crisp fried puris are ready.

Assembling

  1. You can use homemade chutneys, sev and boondi or use store bought as well.
  2. Gather the ingredients needed together firstly.
  3. Break the puris in the middle to make a hole and place in a serving plate.
  4. Secondly, stuff loosely the boiled potato cubes and green gram.
  5. Above this, add the thick beaten sweet curd.
  6. Add a dash of sweet and green chutneys over it.
  7. Finally, sprinkle red chilli, chaat masala powder and cumin powder. Top with a generous sprinkle of sev and a few boondis.

Notes

  • If the chutneys, sev and boondi are ready, then your snack time will be enjoyable. You can always make use of store bought items.
  • Use thick curd and beat it with sugar powder or caster sugar to dissolve easily.
  • Chill the curd for best results.

4. Instant pot Rasmalai

This super easy Rasmalai is all made in Instant Pot Duo making it perfect for beginners and bachelors with simple ingredients you can pick up from the groceries.

Servings: 14

📖 Ingredients

  • 14 Rasgulla (Canned or Homemade)
  • 4 cups Milk
  • ¼ cup Evaporated filled milk (Not sweetened condensed milk)
  • ¼ cup + 2 tablespoon Sugar (adjust according to your taste)
  • Saffron – A pinch(soak in a tablespoon of warm water for 15 mins)
  • 5 Cashew nuts, chopped
  • 5 Almonds, chopped
  • 8 Pistachios, chopped
  • 1 Cardamom, crushed
  • 1 – 2 teaspoon Ghee

📝 Instructions

  1. First gather the ingredients ready. Drain rasgullas form syrup by gently squeezing without affecting it’s shape.
  2. Start the Instant pot in Saute mode, Normal, 30 mins.
  3. Add ghee followed by nuts and give it a mix. Make sure to coat the bottom of the inner vessel as you mix. No need to roast, just a good mix is enough.
  4. After that, add saffron soaked water, followed by milk.
  5. Mix well and let it boil until the timer is up. Mix occasionally.
  6. Once the timer is up, add sugar, cardamom and give it a stir.
  7. Again start the Instant pot in Sauce mode, Normal, 2 minutes.
  8. Add rasgullas to it and let it boil until the timer is up.
  9. Cool down and refrigerate before serving. Serve chilled.

📝 Notes

  • Do not add more than the mentioned evaporated milk as it will turn to dull colour.
  • Also too much of saffron will spoil the taste, make sure you add just a few strands.
  • If the rasmalai turns too thick, later you can add a little milk (boiled cooled) to dilute it.
  • Adding more ghee may affect the texture of the rabri (milk base).

5. Rose kalakand in Instant pot

Quick to whip up in just 10 mins, Easy Rose Kalakand made in Instant Pot Duo. Another beginner friendly recipe for Diwali, even dorm students can make.

Using beetroot juice to avoid artificial food colour and rose water instead of essence.

Servings: 8-9 pieces

Ingredients

  • 250 grams Fresh Paneer
  • 200 ml Sweetened condensed milk
  • 2 tablespoon Sugar, optional
  • 1 tablespoon Milk powder
  • 2 teaspoon Beetroot juice (I ground raw beetroot to extract juice) You can use 2 drops of pink food colour too.
  • 1 teaspoon Rose water or 2-3 drops rose essence
  • 5 Pistachios

Instructions

  1. Keep paneer in hot water until soft.
  2. Drain excess water.
  3. Place it in a blender and crumble it.
  4. Start Instant Pot Duo in Saute mode, Normal, 10 minutes.
  5. Place the condensed milk, paneer, sugar, milk powder, rose water and beetroot juice in it.
  6. Keep mixing until it starts leaving the sides of the pan and thickens.
  7. Spread in a greased/ lined tray and let it set until it cools down.
  8. You can cut it when it is warm, into squares. Decorate by pressing roasted and sliced pistachios in each square.

Notes

  • The sweet tastes best when served chilled.
  • Ricotta cheese can be used in place of paneer. Cooking time may vary.
  • Milk powder can be omitted, but recommended as it helps to bind and give some richness to the sweet.
