Marvel at the botanical-inspired interiors of this all-day dining establishment as you nibble at freshly shucked oysters, wagyu prime rib with Yorkshire pudding and Bordelaise sauce, beef wellington laced with black truffle sauce and rock salt baked salmon with citrus beurre blanc. Don’t miss the specialty, truffle duck.
Easter isn’t complete without eggy creations, and Estate ups the game with a variety of dishes, such as Swedish egg omelettes with trout roe and dill, quail egg Niçoise salad, and Easter scotch egg. Look out too for the Alléosse Cheese Trolley, packed with 24 types of French cheeses, and a good variety of cakes, from popping candy carrot cake to torched citron tart, rum and hazelnut cream puff, and the classic Hilton cheesecake.
The Grand Easter Champagne Buffet Lunch is available on 17 April from 12 to 3pm.

Alley on 25 at Andaz hotel offers up a festive brunch experience with free-flowing platters of freshly shucked oysters, tiger prawns and mussels, as well as cold cuts like Iberico ham, mortadella, and duck rillette. You’ll also get to enjoy specialty cage-free Easter eggs, like Scotch egg and Avruga caviar egg, and a shared carving board of gourmet sausages, roasted lamb and honey-baked ham. If you’re a fan of the popular French bubbly Louis Roederer, head for the National Gallery’s Italian-Mediterranean steakhouse. The indulgent, four-course sharing menu includes a selection of starters, pastas, steaks and desserts: think Challans duck prosciutto with taggiasche olives soil and cassis jam, slow roasted white beetroot with burrata Campana and toasted macadamia, and red kuri agnolotti with lobster essence and freshwater crayfish, livened up with Valencia orange. The highlight of the meal is Gemma’s Duo Steak, comprising black Angus beef tenderloin and wagyu skirt. Enjoy the succulent meats with sides of whipped agria potato, purple sage and parsnip, and broccoli with pecorino.

There’s no special Easter menu at Raffles Hotel’s mod-Italian restaurant, but don’t let that stop you. The regular brunch here features á la carte specialities such as fresh l’Antilope oysters with lemon vinaigrette, lobster salad with pumpkin and leeks, Italian cold cuts, smoked salmon with scrambled eggs and Kristal caviar, and duck foie gras piccata with roasted figs.
Osteria’s Sunday brunch is served from 12pm to 2.45pm at $68 for 90 minutes’ free flow Zardetto Prosecco DOC Treviso Brut, or $98 for Billecart Salmon Brut Reserve. Both options include a curated selection of wines and cocktails, such as Bellini and Bloody Mary.
