Dine on high-end Hellenic cuisine on Palm Jumeriah.

We are just days away from the opening of Atlantis The Royal, but that hasn’t stopped another of the resort’s 17 restaurants from throwing open its doors for Dubai’s discerning diners.

Joining Dinner by Heston Blumenthal and La Mar by Gastón Acurio at Dubai’s most talked-about resort is Estiatorio Milos by acclaimed chef Costas Spiliadis. The renowned Greek Mediterranean restaurant will open its doors on Friday, 10 February.

The first Milos restaurant opened in Montreal, Canada, in 1979, before expanding to New York, Las Vegas, Miami, London and Athens. The sophisticated eatery offers an elegant yet simple dining experience reminiscent of the seaside dining associated with the Cyclades islands.

This ethos of bringing an authentic Grecian experience to Dubai stems from the Greek concept of Philoxenia – a love of strangers and an eagerness to show hospitality – allowing chef Spiliadis to curate an environment for socialising and sharing food.

With this in mind, the centrepiece of all Milos restaurants worldwide is the seafood market displaying fresh catch from the Mediterranean. Here, guests are invited to select their own menu and combine it with unique ingredients such as “My Sister’s Olive Oil,” Greek thyme honey from Kythira, family-harvested sea salt, and a variety of fresh fruits and vegetables sourced from local Greek partners.

When it comes to the signatures, the Milos Special, a tower of crispy fried zucchini and eggplant slices with tzatziki and saganaki cheese, is a must-try. Elsewhere, diners can expect grilled octopus and tomato salad, a whole lobster sautéed in Metaxa and served on a bed of fresh pasta, and the Insta-worthy whole fish sashimi.

Estiatorio Milos will also offer a selection of over 300 Greek and Mediterranean wines. A carefully crafted cocktail menu uses raw ingredients from the earth, such as olives, lemons, and seasonal fruits, to create innovative concoctions that complement the restaurant’s Mediterranean cuisine.

Speaking on the opening, Costas Spiliadis said: “The Middle East, specifically Dubai, has been on our radar for some time. Dubai has become a premier culinary and hospitality destination; with the world’s most talented chefs and well-regarded brands represented. Atlantis The Royal is an ideal partner in our efforts to expose the world to Greek cuisine, highlighting the most exquisite ingredients and classic preparations. I am thrilled to open the doors and have Dubai sample the flavours of Greece.”

With 17 world-class restaurants and bars, including eight celebrity-chef-fronted concepts, Estiatorio Milos by Costas Spiliadis is in good company at Atlantis The Royal. The resort is also home to Hakkasan offshoot Ling Ling, Ariana’s Persian Kitchen from TV chef Ariana Bundy, and Jaleo Dubai by José Andrés.

Estiatorio Milos is open daily for lunch and dinner, from 12pm to 11pm.
