The Christmas gears may be slowly turning, but there’s something else to look forward to this month: Deepavali.

Apart from vibrant displays of Rangoli, Deepavali is often associated with an assortment of sugary confections, also known as Mithai. Since the occasion is essentially about celebrating the triumph of good over evil, what better way than to celebrate it with some sweets?

Mithais come in a range of shapes and colours, and are traditionally made with whey, chickpea flour, ghee, condensed milk, nuts, cardamom, saffron and other spices.
